10-Minute Sausage Skillet with Cherry Tomatoes & Broccoli
This is a great meal when you’re short on time. If you’re a vegetarian, use vegetarian sausage instead of Italian sausage. I like cherry tomatoes but if you don’t have any and there’s a can of tomatoes in your pantry, feel free to substitute. Serve this with a baguette. It serves 4.
Ingredients:
1tablespoon olive oil
12 ounces cooked Italian sausage cut into ¼” slices.
2 pints of cherry tomatoes (or a large can of tomatoes)
2 cloves of garlic finely chopped.
1 pound of broccoli crowns
½ tsp thyme (or 4 fresh sprigs)
Salt & pepper
If you want it spicy, you can add ¼ tsp of red pepper flakes.
Directions:
1. Warm the oil in a large skillet.
2. Add the sausage and cook until lightly browned.
3. Stir in the tomatoes, garlic, thyme.
4. Add the broccoli and season with salt & pepper (and red pepper flakes if using).
