Iced Coffee Popsicles

 

Iced coffee is the perfect drink on a hot summer day. By why not take it a step further and have an iced coffee popsicle? It’s a great afternoon treat and so easy!  Make 6  3-oz popsicles.

Ingredients:

2 cups of brewed coffee

1 tbsp raw honey

¼ tsp vanilla extract

½ cup canned coconut milk

Directions:

1.     Brew your coffee and stir in the honey while it’s hot. Place in the fridge to cool.

2.     Once cooled, stir in the vanilla extract and the milk.

3.     Pour into six 3 oz paper or plastic cups.

4.     Freeze for 45 to 60 minutes or until it’s partially frozen. Then insert sticks. (If sticks don’t stand up, freeze for an additional 15 minutes and try again.)

5.     Freeze for another 4 hours until frozen solid.
