Tomato, Peach & Mozzarella Salad

This serves 4 people as a main dish and 6 as a side salad. It comes together in about 20 minutes. You can make the dressing ahead of time. Keep it in a jar in the fridge. Shake before using.

Ingredients:

Vinaigrette

½ cup olive oil

¼ cup balsamic vinegar

1 scallion finely chopped

¼ cup fresh basil thinly sliced

1 small garlic clove minced

Salt & Pepper

 

Salad

2 -3 tomatoes cut into wedges and then halved.

2 peaches sliced.

1 cup seedless red grapes

8 ounces of mozzarella (or burrata if you prefer)

¼ cup toasted pumpkin seeds

1 head of lettuce torn into bite size pieces

 

Directions:

Make the vinaigrette first.

 

1.      Combine all the vinaigrette ingredients in a jar and shake until smooth.

2.      In a large bowl, toss the tomatoes, peaches and grapes.

3.      Stir in 1/3 of the vinaigrette and let it sit for about 10 minutes.

4.      Divide lettuce between 4 (or 6) plates and top with the tomato mixture.

5.      Slice the mozzarella and put it on top of the tomatoes. Or top with burrata.

6.      Add the remaining vinaigrette.

7.      Serve with toasted or grilled bread.
