Massaged Kale Salad
This is one of my favorite salads because it’s versatile and it doesn’t wilt after a day. Even if you’re not a big fan of kale, I think you should give this a try. Massaging the kale breaks down the fibers making it softer and much easier to eat.
This salad serves about 4, depending on how big everyone’s appetite is. It is ready in about 20 minutes.
Ingredients
1 bunch fresh kale (any variety is fine)
2 tbsp extra virgin olive oil
Pinch of sea salt
Half of a ripe avocado (you can also use guacamole)
Juice of one lemon or lime
1 cup black beans and/or corn
2 chopped tomatoes or ¼ cup sundried tomatoes
2 scallions (green part only)
3 tbsp sunflower seeds
Directions:
1. Wash kale & remove the fibrous stems.
2. Tear kale into small pieces
3. Put kale in a large bowl & drizzle with olive oil
4. Massage olive oil into the kale & add the salt
5. Massage the avocado into the salad, this part is very messy!
6. Once salad is well coated with avocado, squeeze lemon or lime juice over the massaged greens.
7. Add remainder of ingredients
8. Sprinkle with sunflower seeds.
This is a big salad that will keep for a few days in the refrigerator. It is a great way to enjoy kale and to benefit from all its nutrients in a raw state.
Don’t be afraid to come up with your own version, adding things you enjoy. Such as: cucumber chunks, fresh grape tomatoes, red peppers, scallions, brown rice, cooked quinoa, chickpeas, pumpkin seeds, apple slices, cilantro – the list goes on and on.
