Puffed Cornmeal Pancake
This is the perfect comfort food. It’s easy and versatile. Have it for breakfast or a snack or whenever you need a little bit of yum.
Ingredients:
¼ cup cornmeal
¼ cup flour (I sometimes use whole wheat)
1 teaspoon baking powder
2 large eggs separated
½ cup milk (any type of milk works)
½ cup dried cranberries or apples. You can either mix them in or put sliced apples on the bottom of the pan.
Directions:
1. Preheat oven to 400degrees. Coat a cast iron skillet with oil and place in the oven to heat.
2. Combine: cornmeal, flour, and baking powder in a small bowl.
3. Separate the eggs and put in 2 separate bowls.
4. Beat the egg whites until stiff.
5. Put the egg yolks in a bowl and add the milk. Beat these with an electric mixer.
6. Stir dry ingredients into the milk and eggs. Then fold in the egg white.
7. Pour the batter into the skillet and bake for 15 minutes.

PS: I sometimes leave out the cranberries and instead put thin slices of apple on the bottom of the skillet and then pour in the batter. You can also add vanilla to the milk and cinnamon to the dry ingredients. Serve with butter and syrup or jam.
