Brie & Tomato Pie with Mixed Greens
Ingredients
1/4 oz All-Purpose Flour (for dusting)
8 oz Puff Pastry (thawed)
2 Tomato (sliced)
3 ½ oz Brie Cheese (sliced)
Sea Salt & Black Pepper (to taste)
1 tsp Herb De Provence
6 cups Mixed Greens
2 tbsp Balsamic Vinaigrette
Directions
With the rack in the middle position, preheat the oven to 400°F.
Line a baking sheet with parchment paper.
Use the flour to lightly dust a flat surface. Roll out the puff pastry into a rectangle, about 1/2 inch thick.
Lay the sliced tomatoes on top, then the brie, and season with salt, pepper, and Herb de Provence.
Bake in the oven for 15 to 20 minutes or until the pastry is golden brown.
Divide onto plates. Serve with the mixed greens topped with balsamic vinaigrette and enjoy!
