Salmon Tacos with Mango Salsa
This is a quick and easy dish, and it has lots of healthy ingredients even though you’d probably never think of tacos as “health food”. These are also kid friendly. Great for a warm weekend or anytime. I use store bought mango salsa to save time. Feel free to mix up the ingredients if you like to make it your own. Use another type of fish or skip the mango salsa and make it with coleslaw instead of red cabbage. You can also add cilantro. It’s your taco! This makes about 4.
Ingredients
½ lb salmon filets
2 tbsp olive oil
1 tsp chili powder
½ tsp smoked paprika
pinch of salt
8 tortillas
1 diced avocado
1 lime, juiced
Sliced red cabbage
Mango salsa
Directions
1. Preheat the oven to 400 degrees. Line rimmed baking pan with parchment paper.
2. Make the marinade by whisking together olive oil, and spices into a small bowl.
3. Place salmon on the baking pan and pour the marinade over it and bake for about 15 minutes or until cooked through.
4. When the salmon is done set it aside.
5. Warm the tortillas and place them on 4 plates.
6. Flake the salmon and divide it among the 4 tortillas.
7. Top with cabbage, mango salsa, avocado and squeeze lime juice on top.
